Recipe Corner – Apricot Dainties

Apricot Dainties

  • 1 1/2 cups dried apricots
  • 1/2 cup sweetened condensed milk
  • 2 cups coconut
  • 1/4 cup fruit sugar
  1. Chop apricots in a blender and put in a small mixing bowl. Add milk and coconut. Combine well.
  2. Roll into small balls, coat with sugar, place on waxed paper.
  3. Let cookies stand at room temperature for a couple of hours before packing in an airtight container. Freeze or refrigerate for up to  weeks.
