So many wonderful recipes! Today’s recipe comes from Donna C.
- 1 1/2 cups dried apricots
- 1/2 cup sweetened condensed milk
- 2 cups coconut
- 1/4 cup fruit sugar
- Chop apricots in a blender and put in a small mixing bowl. Add milk and coconut. Combine well.
- Roll into small balls, coat with sugar, place on waxed paper.
- Let cookies stand at room temperature for a couple of hours before packing in an airtight container. Freeze or refrigerate for up to weeks.
